It's no surprise then to find Coquilles Saint-Jacques with lemon butter; Pate de Campagne; Fettuccini a la Romana, with proscuitto, garlic and parmesan cheese; or Ris de Veau, more familiarly known as sauteed sweetbreads, among the hors d'oeuvres.
